This deliciously simple recipe is impressive on so many levels. Its secret? The marinade time plus the use of lemon zest instead of lemon juice. It is now a staple in our RV because of its short prep time, minimal ingredients, and easy clean-up. Trust me, in a tiny kitchen, this recipe will quickly become a keeper.
Garlic, Lemon, & Rosemary Chicken
Servings: 2
Ingredients
1 Chicken Breast, butterflied
2 tbsp and 1 tsp Extra Virgin Olive Oil, divided
1 tbsp Fresh Minced Garlic
1 tsp Fresh Minced Rosemary
1 tsp Lemon Zest
1 tsp Salt
1/2 Tsp Pepper
Directions
In a bowl, combine 2 tbsp of olive oil, garlic, rosemary, lemon zest, salt, and pepper. Mix well.
Add chicken to the bowl and coat with marinade.
Place chicken into a gallon Ziploc bag and let it marinate in the refrigerator for 4 hours or overnight.
After marinating is done, bring a pan to medium high heat.
Add remaining tsp of olive oil and grill on both sides for 3-4 minutes each.

This chicken is great in a salad, with vegetables on the side, or even as your protein on a sandwich. Personally, mashed potatoes with sauteed vegetables like green beans, spinach, or asparagus are all top pick choices in my home.
Customize it!
Make it your own by adding different fresh herbs. Thyme would be a great addition here.
You can also sub chicken breast for boneless, skinless thighs. Cooking time might need to be adjusted, so just make sure your thighs are fully cooked!
