Ahhh, the humble potato. Definitely one of my favorite comfort foods. I've truly come to appreciate its versatility. Breakfast, lunch, dinner, or even as a snack. The potato will always be there to bring a little joy to your day.
This simple recipe will certainly become a staple in your home. With only 7 ingredients, you'll probably find yourself making this side dish for more than just breakfast. My short-cut? Microwaving them first. In less than 30 minutes, these crispy, crunchy potatoes will be ready to eat. But watch out, they go fast!
Easy Home Fries
Servings: 2
Ingredients
2 medium-sized Russet Potatoes, scrubbed & washed
2 tbsp Water
1 tbsp Vegetable Oil
1 tbsp Butter
1/2 tsp Salt
1/4 tsp Pepper
1/4 tsp Garlic Powder
Directions
After potatoes are cleaned, take a fork and prick (poke) them all around with the tines. This will prevent them from exploding in your microwave.
Place your now pricked potatoes in a microwave safe bowl and add 2 tbsp water.
Cover the bowl with Saran Wrap and place into microwave for 3 minutes and 30 seconds.
Carefully remove bowl from microwave.
Pull back Saran Wrap and carefully flip the potatoes. They will be hot, so use caution.
Re-cover bowl and place back into microwave for an additional 3 minutes and 30 seconds.
Carefully remove bowl from microwave and let them cool for 10-15 minutes.
Once cooled, give them a rough chop.
Set pan to a medium-high heat. Add oil and butter.
Once simmering, add your diced potatoes along with salt, pepper, and garlic powder.
Let cook on pan for about 3-5 minutes before flipping. This will allow them to develop that much desired crust.
Once flipped, cook for additional 3-5 minutes or until desired doneness is achieved.

Make it your own unique dish by adding fresh herbs and different spices. Paprika, rosemary, and thyme all go really great with these potatoes. Veggies like onions, tomatoes, and bell peppers are a classics way to elevate this side dish as well.

I total hit! I used to boil my potatoes but will not be doing that anymore. This method is easier with less clean up. I did add peppers and onions for Potatoes O’Brien. Will be adding this to my regular rotation.
